Would it be a bad idea to use a server mobo for my new rig? The supermicro x8sia-f to be specific with the xeon x3440.

Not a bad idea. There's no point in switching it out if you already have it.

Doesn't matter a ton, though as server mobo might be lacking some features a desktop mobo would offer.

Yeah, I had it just laying around since I got it for super cheap $25 and can grab the xeon for about $80.. Would it be OK to watercool it? I think the CPU block holes would line up, and I'm not looking at ocing it or anything but why is my current xeon in it (x3430) locked at x18 multiplier? Are all xeons locked to stock or lower?

There isn't much point in water cooling it as you can't OC it, you'd be better off just sticking some cheaper air cooler like a hyper 212 evo on it.

Well I've always watercooled :P I even watercooled my storage server for a bit lol until it broke then had to use air
