The only ways I know of are limited to Linux and Windows together. You could get one of those flash drives with built in encryption. Those should(?) be cross platform.

 

If you had asked this a few years ago I would have said truecrypt, but it's dead now...

If you have one of the enterprise versions of windows, you could use BitLocker, and then this program to READ the encrypted drive on a Mac. No write support by the looks of it though.

Actually, the project has been picked up by another team and renamed VeraCrypt. It's built off the same original core but is being updated to address new issues. It will even still open old TrueCrypt files.

VeraCrypt is free and should be able to do what you need, it looks like they have software for Windows, Mac, and Linux as well.

I second this option, VeraCrypt is absolutely awesome. It's probably the best cross platform option for encryption.
