I want to see how much $$$ I can shave off without really losing anything, if possible. I can probably take $15 off the case, but i'd lose the silence that the Define series offers. Is it possible to drop this to $900?

I can say one thing

If you are buying everything from one place you can save on shipping

Since you bothered to read this I would say one more thing

NCIX has really good prices

You could price match with them for even lower prices

If you are an amazon prime member I say go amazon

But I find them more expensive than NCIX since I am living in INDIA

But for amazon prices might work out

But do consider NCIX

I've had my laptop for like 4 years and only use 100GB on it.......

GTA V alone uses 120 GB after install(If you want play GTA V)

and modern AAA titles take up to 20-100 GB these days(not counting indie)

Well the OS goes on the SSD

And the HDD serves as your Multimedia Drive

And If you want games on ssd you better be looking at something like a 1 TB ssd that sets you back by atleast $350

If you are willing to spend $1000 I can whip you up a better build that you would love

I dont know, maybe the i7 4790k, ive heard lots of good things about it

Or maybe a new fancy skylake i7, it would probably be the best choise

I'd say stick with the Xeon and just drop the hard drive and go with a larger SSD if you're like that. Also, since that Xeon is locked you may as well stick with the heatsink that come with it.
