Im would say I have an above average knowledge about computers. That being said, my question is, if you have multiple monitors in a sli config, can you plug all of them in to one graphics card, or would it be better if you gave each monitor its own graphics card. Can you run muli card configs without sli?

You must plug them all into the top a single card with SLI enabled.

You can run multiple cards outside of SLI, but it will only use a single card in games. In other programs, like rendering, two cards outside of SLI can be used at the same time.
