So I've recently started buying my monitor/moritors for my set-up. I was wondering if I could use the GPU for 1 screen and the MOBO for the other 2. I am only going to use my middle screen for gaming and the others are for productivity. A) Is this possible? B) Does my CPU have to have onboard graphics?

No, a xeon e3 1230 v3 doesn't have a igpu and you need that to run monitors off the mobo. You gpu supports 3+ monitors so just use that, there is no preformance hit when gaming if the gpu is also driving other monitors.

TLDR: plug everything in to the gpu.

Yeah, if your motherboard has a VGA/HDMI/Display Port or something on it, you can use that, I use two Philips 24" Monitors, Middle for gaming (660ti) and the one off to the left using the HDMI From my ASUS Z97-K, But it must have some form of iGPU..Or use adapters for cables if you cant use the ones you want (Like Displayport to HDMI or something)
