How does Apple Pay work?

Just curious, I have been to convenience stores and McDonald's lately and they have an Apple Pay sticker. Can someone explain how it works? Is it like contactless CCs?

Buy Apple, pay too much

Please tell me how this explains the use of NFC to purchase something via the service that apple provides with less than a 0,15 percentage cut, which is payed by the facility that allows apple pay not the user
