Heyyo,

MSI Afterburner for monitoring. It even has the ability for on screen display which is handy whilst gaming in fullscreen to check your temperatures. It's what I do too. Other YouTubers like JayzTwoCents also uses MSI Afterburner.

For benchmarking? The tends to make custom game runs not so much pre-made software... I don't even remember if LTT even uses 3DMark. You can find 3DMark on Steam or http://www.3dmark.com/

Heyyo,

There's a free version too of 3DMark, you don't get all of the benchmarks or as good of results, but its still a very nice benchmark suite.

Yeah on Steam you just click the Demo button. For 3dmark's website it's pretty easy to find the free version too.
