It depends on the intensity of the video editing,the program being used ,the file type being rendered,and the file type(s) being edited.
I would say a GTX 760 would be a better choice because 1000 cuda cores is plenty and the 256-bit bus would benefit you much more than 200 more cuda cores.
I do not think the GTX 770/780 would give a noticeable increase in performance,because in my own experience,whether it's with After Effects or Sony Vegas Video acceleration takes gpu usage up to around 40% (during a supported file format being rendered).
usually it hovers between 5-20%.
