Best to make sure you're paying attention to frequency, CAS latency, and voltage. Ideally they should match, otherwise they will adjust for the slowest module. But yeah, it should work.

If I buy one stick of 4GB of RAM now and add another exact stick of 4GB later, will they work with no problems?

Also, if I were to buy one 4GB now and one 8GB later to make 12GB, would that work?

Yes, that all works if your motherboard supports that.

You have to make sure to have enough slots and that your motherboard supports at least 8GB of RAM per slot, which nowadays usually isn't a problem anymore.
