Yes, no, and just do it.

I'm currently using 8GB of Corsair Vengeance RAM (1600mhz, high profile) and I often get that I'm using up a large amount of RAM, so much that my computer starts to freeze due to the lack of memory.

 

I'm using 2x4GB sticks so is it worth getting an extra 4GB or even 8GB but put it in a different coloured slot? I can only use 3 out of 4 due my CPU cooler covering the closest slot to the socket.

More ram can help you keep more open at a time.

About the height issue. Many ram modules come with those heatsinks, but most of them are removable.

 

I know Corsair Vengeance ram only requires you to slice the sticker that is on top, to remove the heatsink.

If it isn't 2400 mhz ram, no heatsink should not affect performance.

If you would add 2 more sticks of ram, it will run in dual channel.

Don't know about the "channeling" if you only add 1 stick :/
