what does it mean when it is just back plate

 

The backplate is just the (usually) metal plate which covers the top of the PCB, to improve the looks and very slightly increase passive cooling.

 

In the picture below the top card has a backplate the bottom doesn't.

First, we have a specific waterblock for this card, It's the EK-FC970 GTX Strix

 

Second, the Thermosphere isn't specified as a compatible block for the Strix because the PCB of this card is taller than a standard card. So the Thermosphere would not reach the top of the card.
