I grew up with optical and laser mice, so i don't really get why we're not using ball mice. I'm currently goofing off with an old Intellimouse and it's just as good, if not better, than my crap dell mouse at tracking. Can someone explain this to me?

ball mouse require a hard, usually flat surface to work, and due to that restriction is quite inconvenient, especially in use cases where you may lift the mouse, but still need it to move. (but sometimes more convenient in cases of glass or white surfaces, not much of an issue anymore.
