POS and Surveillance

So I'm building a Point of Sale system for a pizzeria and wanted to setup the back computer as the main one that the POS server runs off of. I was going to use an SSD HDD configuration for it. I want to know of a way to have the surveillance system run off this as well on a WD purple drive. Not sure exactly the best way to set this up since I have never messed wit RAID or anything of the sort before.
