Should I go with a 1440p 60hz or a 1080p 144hz display? 

Can you help me find one? ( I live in Italy)

I was planning to buy popular games like gta v, battlefield and some simulators like xplane 10 at max settings.

id go with the lg 29um67...  2560x1080, 75hz, IPS with freesync *(or if you dont use amd you still get a 75hz 21:9 screen)

 

its 330 eur, and IMO it would be the perfect compromise, not to mention far more enjoyable than the two initial options you listed

I'd recommend you get a monitor with an IPS panel, you'll get great colours and view angles. High refresh monitors benefits mostly players who play fast paced games like CS:GO at competetive level.

 

That said, when the high refresh IPS G-sync monitors become a bit cheaper I'm gonna get myself one of those.

That is only 1080p though which looks pretty bad on a 27 inch.
