Measuring CPU temps through a fan controller

I am planning on buying a fan controller which has a screen to show fan RPMs and temperatures. My question is this: how do I get the screen to display my CPU temperature? Do I place the cable-like-temperature-measuring-thingy between my CPU and cooler? And what happens with my graphics card? Also, is this a reliable method to show hardware temperatures or is it inaccurate? Lastly, what other parts of my pc would I want measure, in your opinion?

Controller needs to have USB connector for it to get access to real CPU temps. Otherwise you are going to be using thermal probes. Place one of them as close to CPU socket as you can and check how much it differs from what mobo sensors show.
