Added bells and whistles as you go higher. Like an oc button and on and off on the board, more pcie buses, more sata ports and slightly diff. asthetics, more usb ports on higher ones, etc. No real marked improvement, except 3 doesn't have sli support (a real deal breaker for some people).

Whats the main differences between GAMING 3 and 5 series , or even 7 ? ( motherboards)

More pci e buses, not lanes. If it was lanes we wouldn't have a real need for x99. And if you mean extra pcie lanes available through plx are only for workstation boards.

gaming 3 does not support SLI

Gaming 5 and 7 support 2 way sli 

 

Gaming 7 has 8 sata 6 gb

gaming 5 and 3 has 6 sata 6 gb

 

gaming 3 has 2 PCI-E 3.0 x16 slot 

Gaming 5 and 7 has 3 PCI-E x16 Slot

yeah gaming 3 has 2 pcie slot but They not support SLI Which mean if you put your gpu only 1 detected

only crossfire support for gaming 3
