When most people talk about an embedded system, usually it is a system being run for a very specific purpose. A great example of this would be a wireless router or even a TiVo box, which runs on an embedded version of Linux if I remember correctly. Also, I believe most embedded systems run off of RAM, but I might be wrong with this one. You are not going to want Windows Embedded for a normal computer. Windows Server though, will run with a lot fewer problems, but I would still stick to normal Windows if I were you.
