Video rendering= Rendering edited video clips with effects on it. It's basically how long it takes to render.

3D video rendering= Rendering what happens in 3d. It's basically how long it takes to render.

Video Editing= The actual editing and not the render time but how smooth the playback and interaction of editing is.

You don't need separate systems for editing and gaming. For video editing, a high end gaming card will do until you get into $1000+ workstation cards.

How high end are we talking here? What kind of editing are you doing? File size?

If this is your first build I would advise against water cooling.  If just cable management is difficult especially.  It will make things much simpler and water cooling isn't necessary anyway.

Video editing is your interaction with your editing programs.

Video rendering is waiting a really long time while all your effects and edits are combined into just images for video playback, for the final product.

This will be a very good gaming/editing machine:

What kind of editing are you doing? Are you just stringing high quality content together or are you also using heavy post processing effects as well?

What quality of videos are you doing and how long will they be?

You won't be able to overclock with the xeon but it should still be more than enough for your needs since it's not too far off from a 3770.
