I have a i5 750 4GHZ 1.375V under a Megahalems. It idles at 50, starting stress test it gets to 75*C within 3 seconds and 80*C within 2 minutes. Ending stress test, it drops to 60*C within a second. Is it just the heatpipes working really well, or is this an indicator of bad thermal contact and I should reseat the heatsink?

how are you monitoring your temps?

The reaction in your chip is instant. This is not the temperature of the entire cpu but the temperature of the core.

This means it while eg. gaming can fluctuate 5-10 degrees. The drops you see are normal.

Sure. I just did quick IBT test and while running it my temps went from 73C to 58C and back. Right after I stopped the test they dropped from 60C to 40C. Monitoring with RealTemp. So I'd say its more about software updating interval being one of reasons why drops seem to be so sudden.
