By "windforce", you mean the gigabyte G1 Gaming or the non gaming version? Both use the same windforce cooler, but have different specs.

What is the difference between them except from the "out of the box" clock?

Backplate, metal shroud(vs plastic) and more heat pipes.

EDIT:

Is is also a 'binned'  board. Which allows for awesome overclocks or something.

Depending where you are, pricing and availability. For instance, I got a wooping 125$ difference between the gaming and non-gaming version during Black Friday sales.

The GTX 970 FTW has higher clock speeds than the G1 from Gigabyte, that's one of the reasons I got it in addition that I have always like EVGA.

1367 is the boost stock clockspeed of the G1 Gaming... I don't know why it says that it's less on the box, but I have it and I can confirm that (I've read other people with the G1 Gaming also getting 1367 Mhz at stock)

Anyways I think that the FTW boost clockspeed should be higher...

Hmm the FTW is literally 1367 as well so I guess there's not a difference besides cooler. The base clock is 1178 on the G1 and is 1216 on the FTW though.

does that really matter?

The moment you get into a game the G1 ramps up to 1367 :P

No it doesn't matter at all honestly. When I was shopping for my 970 I was comparing clock speeds and noticed the FTW was the best out of all the 970s I could find. I'm also a big fan of EVGA so it was an easy decision for me. I almost got the Strix because of the 0db fan mode....when my FTW arrived I read the manual to discover that is has the exact same feature as the Strix, I was pleasantly surprised.
