if i am going to control my 3 case fans and my 2 cpu cooler fans with the motherboard headers will i be able to control them with just the motherboard or will i have to get a fan controller (motherboard: asus sabertooth mark 1) and the fans are a mix of corsair af140s and sp120

Motherboard will allow you to control them all. I'm too lazy to check if you have enough headers on board, but if you use a splitter than the fans running off the splitter will be running at the same speed.

PWM gives you a finer control of RPM, but no, you'll still get some control of the fans you already have.
