how does the power per channel effect the effectiveness of the controller?

Not sure... I have control from 40-100%.

Go with the Sentry Mix 2 if you just want a little bling....each slider (controller) can accommodate up to 30 watts...yes sir....you heard right.  There are six channels and each controls 30 watts... :o  In general, a fan will use around 2-3 watts....do da maff.... ;)

Not sure what your budget is, but Lamptron makes some pretty awesome fan controllers like the FC5-v3.

6 Channels

30W per channel

Voltage and RPM readouts for each channel

Plus the ability to plug in 6 temperature probes
