You could probably cut back on the PSU a lot. I use two gtx 980's OC'd and an i7 4790k oc'ed @ 4.5ghz and I only use a 750w psu.

I am well aware that a xeon can't overclock. However, it will be at a heavy load ALOT because of what I will be doing and it will be an eye pleaser.

That psu is totally overkill. 750w is already more than enough for two gtx 970s anyway!
