boot disk

so ive been trying to create my own boot disk similar to hiren's or falcon4, however ive run into 2 issues.

 

the first, i dont know how to get multiple applications in a simple menu without using something like Yumi's MultiBoot, and i don't want to use that as i think the interface is hideous.

 

the second(and more important), i want a simple CMD on it. something like what you'd get putting a windows disk in, for root access. i cant find anything thus far that has actually worked for this.

 

any ideas?
