If I was you, I wouldn't cut out the I/o shield of the card. On top of that, a single GPU config is always a lot more stable than SLI and unless you're running Crysis 7 on 28 4K monitors, realistically, a GTX 780 should already be more then enough for anything. You won't really "futureproof" your build by having higher specs as the technology will change before the card itself gets outdated. If you can/want to go for a Titan, do it, but if I was you, I'd get a 780 and maybe buy another SSD for RAID or something else. It would be more worth it IMO.

As for the fans, I'd go for #3:

That, I don't know for sure but I'm guessing focused flow doesn't really matter since you just want to pull air through it and it doesn't matter where the hot air goes, as long as it leaves the case. Personally, I would opt for any fan with good static pressure and the Noctuas NF-F12 are an amazing choice for doing just that. You can't go wrong with these :)
