Unless rendering is your daily job, or you make money from it, x99 is a waste of money.

A 4790k can render videos perfectly fine. A 4790k also performs better than the 5820k in everything but multithreaded tasks, where it is just a little behind.

With the money you save by not going with overpriced x99, you can afford a 980 which will greatly improve your gaming experience.

Would you rather get 20fps more in games, faster programs, and better computer experience? Or have 5 minutes shorter rendering?

x99 is is not worth the money unless you're getting a 5930k or 5960x for a daily job of video editing or 3d rendering.

that makes sense! but am I not more prepared for the future with x99?

No. 1150 has more longevity than 2011-3. This means you will have more option to upgrade in the future.

2011-3 will not have any new processors for many years.

The GTX780 is just a placeholder as the 970 isn't on the German pcpartpicker. The same goes for Windows 8.

Spending less on mobo-memory-cpu by going z97 and grabbing a 980 or maybe even a SLI would be amazing and definitely as "future proof" as the x99, but with better FPS.

If money ain't a problem, get x99 and buy the best GPU solution you can. If your money does not grow on trees, get z97 and the best GPU(s) solution you can.

I see your budget is 2k euros so if you go x99, I believe you'll have less money to spend on your GPU, thus, I'd go with the i7-4790k and cheaper memory and mobo. Or just wait for two to three months until prices start dropping a little bit.

If you have lots of money and already have 2 980s or more, then get x99 just because you can. But honestly a 4790k is more than enough for editing and rendering.
