Yep, that's just about ideal. 

 

A dual rad + a single rad look more aesthetically pleasing to me though

Its enough, will also allow you to run the fans at really low rpms.

I was planning to watercool my computer and i was wondering how many/thick radiators i need. I was planning to buy a (Alphacool NexXxoS ST30 Full copper 360mm) and a (Alphacool NexXxoS ST30 Full copper 240mm). And i will be running a i5-4670K and two 780's. Halp

If you can fit a thicker 360 or 240, say a 45mm thick radiator, then you'd have some more headroom for OC'ing everything, but so long as it's got some decent fans on it, you should be fine.
