AX860i will be perfect.

AX860i should be enough.  It's not possible for a 780 to draw more than 300W even if you put it on water and overclock it to the max.

Yeah, you'd have to make your CPU pull like 150W to max it out... you can go for a good 1000W PSU if you want I guess.

860w will be fine. I put a more powerful rig using an SBE chip and Titans's SLI'd in a good calculator and got 752w.

I'd say to ensure your PSU will be enough if you decide to make SLI's, get the AX1200i

That's the power consumption of the whole system.  Like I said the 780 can't draw more than 300W on it's own.
