QoS config?

Hi, first of all I want to ask something, It QoS really matters? It's worth it?

 

Then, I have this on my TP-Link PA2010 Driver:

Now is configured automatically in Online game, but I want to configure it manually. You see there are 8 "channels", how I can know where is the data I want to prioritize? like online games and video stream over the rest.

 

By the way, I'm doing this, because I'm getting issues with jitter, when playing games I got 100 ms of ping and then rises over 500 ms in a second or two and then it stabilized to rise again, etc etc

 

Any help would be appreciated
