So my mobo says DDR3 1600/1333 and my Xeon says DDR3 1600 and I have DDR3 1333Mhz RAM. Would it work. I also have some 1866 I would rather put in if it will work too.

From my experiences, the RAM frequencies stated by CPUs and motherboards tend to be pretty lenient.

So I could prob go one speed above or one speed below without running into problems. Either of the two would be completely matched ECC sets

From what I know, it should all work just fine.

 

I do see @Ssoele here though, and he knows a fair bit more than me on this. What do you think?

If you are working with ECC ram, I would not go about the rated speeds of the motherboard, CPU or ram itself. Use the highest that is supported by all 3, you can always underclock that 1866 memory to 1600.
