I would say an i3. Once you pay for aftermarket cooling, and an overclocking motherboard the Pentium g3258 route is actually just as expensive if not more expensive. If you end up doing anything with more then two threads(lets face it you will) the i3 will beat the Pentium even with an overclock.

Intel pentium g3258 or amd athlon ii 760k. Ideally you'd want to overclock them, so make sure you get a cheap aftermarket cooler like a hyper 212 evo for them.

Intel Pentium G3258 or the AMD Athlon 760K if you are getting a GPU, or, you could get the AMD A10 7850K if you are going without a GPU. it should be good enough to run minecraft at 720p at high FPS so long as you get some fast RAM, ideally 2133Mhz which is the AMD APU sweet spot.
