There should be a way of checking the planet's inclination, but I haven't played the latest version of KSP yet so I'm not sure. I guess you could just Google it, the KSP wiki is pretty comprihensive

Hello Folks!

 

I'll make it quick, what is the best way to match orbital inclination with planets/moons?

I always end up with burns that need 2000-6000 m/s delta V.

 

Am I doing it wrong, or is that just how much it needs?

Try to launch with the correct inclination to start with (Instead of just pitching over to the east, pitch slightly to the north as well) so you only have to make small corrections of (usually) >100m/s, depending on how accurately you launch.

 

And there is always MechJeb. If you don't want it to fly the launch for you, you can set the launch autopilot up as if you are using it, but instead of clicking 'Engage Autopilot' , click ' Show Ascent Path Target' (or something along those lines) which will display a target which you can follow on the NavBall.

Just checked the wiki. It says the inclination.

Apparently Eeloo is 6.15.

Well launching right will at least work for getting to moons from planets, but I'm not sure about interplanetary travel. I guess it is part of the escape burn from Kerbin which will allow you to get into the right inclination for the planet. Try playing around with the maneuver nodes before you start your escape burn.
