Well soon I will be building my second & third computer builds and since mine will be a media ripping and encoding along with some gaming station, I was thinking about making a NAS or server type of setup dedicated to my Xbox 360 streaming. My question is which would be better first off using an internal harddrive or having a NAS personal cloud setup, or an HTPC, or an actual dedicated server? I'm don't really know a ton about the networking terms and would be willing to learn too.

It entirely depends what you require.

Do you want a NAS + other stuff (OwnCloud, Plex, etc.)?
Do you just want a basic NAS?

It just depends what you want to do. 

If you want a NAS along with it transcoding media on the fly, then you need Plex and you need a dedicated server. 
If you want a NAS that can play movies directly only a TV, then you need an HTPC.
If you want a NAS that is just a NAS which is basically just attached storage, then you can just get an external HDD and attach it to your computer/router and share it.

I have a NAS that also streams media to my TVs/Devices, is a Minecraft server, and downloads my torrents for me. 

The possibilities are only limited by your interest in depth and your budget.

Well it'd be storage and playback for my 360 extender. I thought the external would be a good solution however interal drives would be faster correct?

Not really. They are the same drive in a different enclosure most of the time. The only real difference is 5600RPM VS 7200RPM. That's it though.

What would be the benefits of having a 2/4 bay NAS drive? I suppose the cloud however that setup probably won't work with my Xbox 360 extender huh? I might just get a fantom external 3tb drive, since its cheaper then a wd black internal.

I would go with the external 3tb personally. 

The NAS would probably work with the extender as long as it's connected to the same router, but it's more complicated to deal with.
