Ok, so currently i am running a evga geforce gtx 680 classified, and running 2 monitors, I am getting 1 new monitor for a 3 monitor setup and getting 1 morr GPU Could i use another GPU that the 1 i have without running sli to run for the secondary monitors?

I think you should be able to do it, although playing a game with all 3 monitors shouldn't work.

If you mean you dont have enough connections on 680 for 3 monitors and want a 2nd cheap gpu to run that then yes it will work 

BUT you cant do surround dont even think about it,you need two 680 SLi to do surround.

Yep, you can connect 3 displays in 2D surround or 3D surround. You can also attach a 4th monitor.
