A friend of mine has a Sapphire HD7850 and just bought himself an XFX HD7970. Is it just a matter of swapping the cards out and it's good to go, or is there more to it? Not sure if the drivers are different or whatever.

Shouldn't need to reinstall drivers with another AMD card though sometimes you may need to.  Just try installing it and see what happens, it should recognize it no problem...

I would uninstall the drivers and use CCleaner to fix and remove all the remains of the drivers then switch the GPU and install the latest drivers to avoid possibly having errors in the future.

Just swap and drop;) because if you have a 7000series driver installed your all good and the old gpu 7850 is 7000series  and your installing a 7970 which is also a 7000series card so swap and drop;)
