Games, programs or workloads that it will be used for: I mainly use my system for heavy 3D work like simulation, asset creation and rendering in Houdini and work in Unreal. Though its also my main gaming pc where I play AAA games like Expedition 33 and Horizon.

Motherboard: 
ASUS ROG STRIX Z790-E GAMING WIFI DDR5
CPU: Intel Core i7 13700K
GPU: GTX 1080
RAM: G.SKILL Trident Z5 2 x 32 GB 288-PIN DDR5 6000 MHz
Power supply: Corsair HX1200i
Monitors: 2x 4K 60 Hz monitors (will probably upgrade for a higher refresh rate at some point)

I originally built my pc in 2016-2017 though I've had to upgrade my CPU, RAM and motherboard due to it being quite outdated, and my Windows version no longer supporting my PC hardware.
The desktop is mainly used for work-related stuff in Houdini and Unreal so combined with good graphics, that's the main priority. That said I would very much like to be able to play most new and upcoming games on the higher end of settings on a 4K screen if possible.

My main aim is something that is a bit feature-proof for a year of 5 and doesn't to far exceed what other hardware I currently have, as aside from my monitor, I don't plan to upgrade it anytime soon.

I'd like an NVIDIA GPU as that's what I'm used to so far, though I'm open to AMD if its would be significantly better.

I'm kinda lost on what to look at at this point, so some advice would be much appreciated.

Welcome to the forums!
Are you significantly bottlenecked by your current CPU cores? If not, I'd recommend just dumping all the money into a used GPU, especially if your workloads are GPU accelerated.

For 800 euro you can buy an RTX 5070 Ti. There is no faster card for that much money as it beats out the AMD RX 9070 XT, which is €70 less. The 5070 Ti can play most games at 4K using DLSS upscaling. You can't get a faster card without spending €1,000 for an RTX 5080, or finding a high-end used card.

The RTX 5070 Ti seems like a good option, though I was wondering if there are more options. This card is directly at my max or slightly above the budget after all. So is it really so much better in terms of price to performance than other cards within the budget, and if so, why (or why not) compared to others?
