Advice for Upgrading CPU

Country: United States
Games, programs or workloads that it will be used for: Strictly gaming
Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc):
Current Specs:
Motherboard: MSI B150M MORTAR ARCTIC LGA 1151
CPU: i5-6600K 6M Skylake Quad-Core 3.5 GHz
GPU: Geforce GTX 1070
RAM: CORSAIR Vengeance LPX 16GB (2 x 8GB) 288-Pin PC RAM DDR4 2133
Power Supply: Rosewill HIVE-750S
Monitor: (1) monitor AOC (not sure of model, but it's 60 Hz) *would prefer two monitors but will wait to upgrade*
Extra: I have a new(ish) m.2 SSD (980 Pro PCIe 4.0) that I can't use due to the CPU being 6th generation
. I'm currently using a 256Gb SSD for OS and a 2Tb SSD for everything else.
Built back in 2014.. the graphics card seems to hold up well with medium-high settings in most games, but the CPU is maxed at 95-100% (all non-essential programs and overlays closed) causing tons of stuttering/freezes/etc.. I've tried searching and using every tip in minimizing CPU usage (both in-game and OS side), but it seems to be my first bottleneck.. so this is where I'm wanting to start the upgrade process.
Looking for any advice on choosing a new CPU/motherboard. Currently looking at an AMD Ryzen 5 7600X CPU with MSI PRO B850-P Motherboard. Only concern is DDR5 ram which seems to have skyrocketed in price. Wasn't sure if DDR5 will be necessary for future-proofing my PC or not..
Thanks in advance for any help

Ryzen 5700X and a B550 motherboard, reuse your DDR4 RAM and try to bump it to 2400MT/s or more.
DDR5 is wasted until you get a much better GPU, to be perfectly honest.
