I have purchased a 6800XT from EBay and I'm running into black squares popping in and out in firefox and pink flashes in cyberpunk.

 

I have used DDU and installed the correct drivers.

 

I haven't been able to find if this is an issue or not, i am using one daisy chained cable (two 6+2 on the same psu connection) as when I purchased the PC it only had one cable.

 

Can this cause the issues?

 

If it can I will order a cable for the PSU and retry

Nope. Changing power supply cables isn't going to fix it. Your graphics card is bad. If it has been doing this since you bought it I would guess the last owner had the same problem and that's why they sold it.

Black quares and pink or green lines/flashes is an indicator of a dying GPU and failing VRAM.

This GPU is toast. Unlucky.
