You shouldnt go with 2 760, go with 1 780 or 780Ti is much better.

If you intend to go with 2 760 though, go with a 750W Corsair Semi modular PSU, if 1 780 or 780Ti, go with Corsair CX 600W Semi modular one.

For RAM, 16Gb isnt really needed for a gaming build, so I'd recommend buying 1x8GB RAM now, and if you ever feel the need for more buy another one. As for which one, I think one of these:

Or if you want 16GB right away

Also, the new 5th gen CPU is coming out, so maybe wait for a feel more week to get the i5 4690k instead? and a MSI Z97 GD65 Gaming Mobo along with it. The Z97 support both the old 4670k and 4690k so you dont have to worry about it.

Sort of. The problem is this, there's alot of games out there dont support SLI, and some even outright run worst with SLI then by 1 of those card. And for the new games it take times for ppl on Nvidia side or from the game developer side to make upgrade for it to support SLI, the prime example right now would be WatchDogs, which dont have any benefit from SLI. So as a general rule it's usually better to have 1 powerful GPU compare to running SLI 2 weaker cards. Ofc if you already have 1 760 then buying another one make sense, but if you are buying new then go for the 780 instead.

In addition to what Megazero already said:

SLI or Crossfire cause microstutter. So you also have like minilaggs because the two graphicscards can't run 100% in synchronism. Some people nearly don't notice and others are not able to play because of it. That's another reason why one single powerfull GPU is better than two less powerfull GPUs in SLI / Crossfire in my opinion. And two GTX 760 cost about the same as one GTX 780 while the 780 will perform nearly as good, but without microstutter and without the need of an SLI profile. And remember most new games don't have a funtional useable SLI profile in the first weeks after release.

So just go with one GTX 780 and you can even save some bucks by choosing a less powerfull PSU. A good 500W PSU with 80Plus Gold can easily handle your Intel Core i5, the GTX 780 and everything else. If you want to be sure grab a 550W or 600W PSU. With two GTX 760 you would need at least a 750W PSU.

And about the RAM:

Like Megazero said 8GB is enough for gaming. But I'd recommend going with two 4GB sticks instead of one 8GB stick. Because having only one RAM stick can be unstable and cause Bluescreens. Also you loose a bit of performance. And since your mainboard offers 4 slots you can still upgrade to 16GB (4x4GB) if necessary.

ASUS ROG Strix B550-F + AMD Ryzen 5800X3D; ASUS 6800XT TUF; 16GB G.Skill TridentZ 3600; bequiet! Dark Power 13 850W; Samsung 860 Pro M.2 2TB; PHANTEKS Evolve X
