But as a total noob how should I set the curve? I know how to tweak it in the BIOS but I'm not sure what settings I should use exactly (e.g. 75% at 80C). My MSI motherboard lets me set four points in the curve (they call it "smart curve" or something like that.

You can download programs that you can use to change the fan curve in windows, much easier than messing around in the BIOS all the time.

MSI has this software for their motherboards.

I personally run all my fans as fast as I can without them being audible or bothersome.

You just gotta figure out whats best for you, it can take some time to set up correctly since you might want to make small adjustments...

There is no set way to do it.

If you can run your CPU fan at lets say 60% at 80c-85c and it wont go above this during heavy gaming, that sounds good to me.

If you run at 60% but your CPU never goes above 65c but you are being bothered by the noise, I would trade lower fan speeds and lower noise levels for a little bit of higher temperature. So I would try 55% fan speed or 50% fan speed and maybe get 75-80c instead. But thats just me.

This is my personal CPU fan speed.  I do have an AM5 CPU so they work a bit differently in terms of max CPU temp and boost, but you get the idea.

I dont like fan noise and this is a constant 28% fan speed, its enough to keep my CPU under 90c during heavy gaming.

Hello! I'm wondering what the quietest fan curve I can set up without damaging my cpu is. I have a ryzen 5 3600x, an MSI b550 motherboard, and an AMD Wraith Stealth (yes, I know it's loud but I'm trying to get it as quiet as possible). Thanks!

Max temp for a 3600x is 95c but I wouldn't recommend running it at that temperature.

Anything under 80c during normal use / gaming and a few spikes to 90c is fine.

Could probably go a bit higher in temps, but I am being cautious.
