I have a good build right now but I am getting a new case, aio, and fans.

 

Ryzen 9 3900x with PBO enabled

ASUS DUAL RTX 4070 OC

ASUS PRIME X570 PRO MOTHERBOARD

 

PSU: EVGA 80+ GOLD 800 WATT PSU

 

The PSU seems to be in great condition and isn’t too old I guess. The PSU has never had problems or ever shut off on me and I’ve had it for a while. 

Just wondering If I should replace it when I get my new fans and case this month that I will be changing my stuff into

If there's nothing wrong with it, there's no need to replace it. An 'OK' PSU can serve you for years, from upgrade to upgrade.

Most of EVGA's gold models are at least solid enough to fail gracefully. 
That being said, if you have the spare cash replacing the PSU now (probably shoot for 1000W A tier on https://cultists.network/140/psu-tier-list/) you will save time in the future and you can keep the old one around as a spare.

What’s the best 1000w psu that is bang for the buck? I hate overspending on PC parts.

Based on the wattage it's likely a GD or GE model. I believe these models have 5 year warranties and are Tier B on the PSU tier list LinkedIn the post by @OddOod. So you should get a couple more years of use.

 

If you want to replace the unit consider a 750W or 850W ATX 3.x compliant model. 

80+ ratings certify electrical efficiency. Not quality.

I see no reason to change a working PSU, and it's not that old if it's 4 years
