I'd get slightly better M.2 if it's the only drive, it's nice to have at least one of those fast if you can afford it.

 

Also since they're planning to play R6 Siege and Fortnite I'd slightly bump up the CPU.

It's hard to say if 9070 XT will ever drop back to MSRP price, 800$? Maybe, the closer you get to 750$, the less likely that is for the price to drop all the way down there.

Spreadsheets yes, but I also need it to run trading software like the Bloomberg Terminal, and Fidelity Active Trader Pro.

Are those in any way actually demanding softwares? Because if not then you can just get a gaming CPU and be done with it.
