So my work was going to toss out some old, IBM keyboards that we used before we upgraded to newer software, and my manager instead gave them to me. I grabbed the cables that is needed for them (cause they weren't regular USB C connectors), and while one of them went to a regular USB end, the other one has a strange USB end.

What is this kind of USB connector called? Is there a way I can get an adapter to turn it to a regular USB cable?

That is a powered USB connector. It can supply additional power, in your case 12V, to attached devices commonly used with POS systems to avoid having to use individual power bricks. It has been pretty much replaced by USB PD at this point. I doubt there would be an adapter for sale for this, even if there was it would probably be quite expensive, you can try building your own though.
