New build, need help refining it.

Budget (including currency): 1250.00 USD (For GPU only, the rest I can get for Christmas and with the funds from selling my Old PC.)

Country: USA

Games, programs or workloads that it will be used for: COD, Valorant, Adobe suite (lots of editing), and other games like Throne and Liberty and things of that nature. I also stream and record videos. 

Other details: (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 

I am upgrading my my previous build because I want better performance from my old 3080 build at 1440P. I play at 240 HZ and want to maximize it while I record and stream games to my friends and for content on YouTube. The Monitor I have is the Samsung Odyssey G7 

 

Currently this is the build I am shooting for. I have the motherboard (which I can return for the next 20 days if needed. I did get it for 200.00 dollars which I think is a deal) , and the case, but everything else is up for grabs. I do have other M.2 ssd's as well that I will be bringing from my old build.

 

Mainly I am wondering what GPU I should be going for. I know the the new 50 series cards are coming out, but I am not against going with AMD if a good deal comes up. I am curious on what ya'lls thoughts are, and if my build is good or if I should change anything at all.
