So after installing a VPN on my phone, I've noticed that many websites will draw upon your IP address to set certain location-specific settings for example, if your VPN server is located in Japan, Google maps will display in Japanese.  Being as I don't read Japanese, this completely breaks Google maps for me. I want to onow if there is a browser plugin that'll override any IP-based settings in websites.

Don't think there is. It's ultimately the web server that decides which version of a site to deliver to your browser.

 

A lot of websites these days use your IP, rather than the language settings of your browser and/or OS, which sucks.

 

For Google, you can try adding "hl=en" as a query parameter to the URL.
