i was thinking about the AMD Ryzen 5 8600G 4.3 GHz 6-Core Processor as it is the same price but seams like core clock is higher

The aftermarket cooler offers better performance. But there is nothing wrong using the stock cooler, it may not offer as much OC headroom.

Using 4 sticks of DDR5  is not as simple as adding two sticks. Memory upgrades are currently better done by replacing existing memory.

Base clock isn't everything when it comes to CPU performance. The 7600 has a slightly higher turbo clock and offers better single core performance than the 8600G. It also has a larger L3 cache which should offer better gaming performance.

Budget (including currency):  AUD $1,600 but ok to go 100 to 150 over but would like to stay close to 1,600 if i can

Country: Australia

Games, programs or workloads that it will be used for:

Forza Horizon 5, Snowrunner with heaps of mods, modded and shader Minecraft, Gta 5, f1 24 and forza motorsport.. Also used for web browsing and commonly have a lot of tabs open at once. will also do some 3d modleing for desgin work but not doing any rendering at the moment but would be great I could. currently running a 34in aoc 1440 p i think its 2900x 1440 or smth

Other details:

Running a gtx 750 with 12g of ddr3 1333mhz Ram and a i5-3470 with 720gb ssd( looking for at least one tebibyte).  so most modern hardware would be an upgrade. wanting good longevity and upgrade path if i wanted to upgrade gpu, cpu or add ram.

I made a pc part picker list of what I think I would be good but would like feed back. also would like good storge as it will serve as storge for my photos (pre and post edit).

thanks inadvance for anyhelp

A Ryzen 7500F or 7600 would give you a better upgrade path for the CPU (and RAM, if you pick DDR5), especially since we don't know if 13th-14th gen CPUs will be trustworthy long-term.

The case is kind of small (< 330mm GPU), so you might want to pick a bigger case if you plan to go with a high-end GPU at some point. The same goes for the PSU, it is enough for a 4070, but might (or might not) have trouble with a more powerful card like a 4070 Ti Super or 4080 Super. Going for a good 750 or 850 unit (ideally ATX 3.x if you plan to buy nvidia beyond the 4070 non-Super) is a safer bet.

I'd have considered fitting 64GB, but since you only have 12GB right now, 32GB still seems like a decent upgrade. You can always add more later (at least, with DDR4, running 4 sticks on DDR5 is trickier).

I'd have fitted a better drive, but your budget is not huge and the NM620 has reasonable TBW numbers and a 5 year warranty.
