I am considering buying an Xbox Series S for playing Fortnite however I would like to know if I could pull a stable 120fps and if not what is its fps limits.

I guess if you use it in performance mode I think. There might be an option for the Xbox Series S. But 120FPS is limited by games AFAIK. So not every game can/will support it.

It will run Fortnite 120fps at 1080p.  Though would urge you that if you plan to play other games especially in the future to go ahead and invest in the Series X if not using a computer.  X has more performance and more storage.
