The pc will be for gaming lightly at 1080p as well as video editing. I have a budget of 800 USD and it must have a 3060 12gb and a case with 3 or more preinstalled fans. Aside from the AIO, the build should have no rgb. I am specifically looking for advice on technical details like how to put it together, and a different motherboard that supports the processor, has built in WiFi, enough fan headers for the case fans as well as the cpu fan and pump fan. If you do find an alternative, it should fit within the budget without having to get accessories for it. Note that all parts must be available on Amazon.

An Intel alternative:

 

- Case doesn't have 3 pre-installed fans, but does have 2 and that's enough. The RGB can be turned off.

- It has 2TB SSD and 32GB of memory (up from 1TB and 16GB).

AMD alternative, not much different to yours (and I kept the cooler), but it does have 32GB.

 

If it was me, I'd fit a cheaper cooler and switch to the 5700X (if you don't need the IGP and the 5700G's box cooler).

 

For gaming only, a 6700 XT would be better value too, I think.

There are customer reviews for this board where they said it worked fine out of the box and ASRock have updated their spec page, so I think it's probably shipping with a compatible BIOS at this point. If I go B550, it's hard to get integrated wifi and save anything meaningful, so my spec would have ended up the same as yours.
