So like how do our gpus and cpus measure temperature.  Do the sockets have thermocouples? Or do Chips themselves have them built in?

The chips have sensors on them, tho it is not uncommon for GPU's and AIO's to have other temperature sensors on them (for example liquid temperature sensors on aio's)

Correct. They are not the same, but serve the same function for different situations.

 

Thermistors look like a small bead on a wire. Thermocouples are also small but are flat and use 2 different metals. 

 

I'm not sure which are used in mobos and such, but I wouldn't be surprised to learn it's both.
