If you wanna max the budget you can fit a 3080ti or 6800xt, if you wanna save money 5700xt and 6600(xt) go for around 150€

Other details: I've got storage already. It should be a pretty basic/beginner PC for a 12 yo but i have no experience with the components on this level so any help is very welcome. I'm especially unsure with the GPU.

What resolution and refresh rate do you intend to game at?  

 

I would've said spend slightly less on the case, power supply and cooler to get a stronger CPU, but if it's a 12 year old playing minecraft, probably any build will work fine as long as the parts are compatible.

6600 only uses 8 pcie lanes. In theory running them on a pcie 3.0 cpu is a noticeable hit to performance.

The 5600 gives you PCIE 4.0 and can run on the stock cooler just fine. If you wanted to keep a tower cooler you easily can and still stay under the 800 budget. Without a cooler you get more performance out of the computer overall and save 10 Euros. 

I did add a cheaper alternative, but very competitive tower cooler as well.
